Power root from the Andes
On the outside, it is reminiscent of our radish or sweet potatoes. For centuries it has served the locals as a valuable basic food. The tender tuber is eaten as a vegetable, salad or just plain. The taste of the yacon tuber is reminiscent of refreshingly sweet honeydew melon or pear.
Yacon is therefore not a vegetable, but - due to its high fructose content - a fruit. Because of its hypoglycemic effect, the yacon root is also called "diabetic potato"
